Super moist with pieces of persimmon and warm cozy spices. Perfect for the holidays! Can be made ahead of time and transported with ease.

Preheat oven to 350 degrees and grease with non-stick cooking spray a 9x5 inch loaf pan. Place parchment paper in the loaf pan. The cooking spray will help the parchment paper stay in place. You will be able to easily lift out the bread once it is baked.
In a large mixing bowl combine flour, sugar, baking soda, salt and pumpkin pie spice. In a small bowl combine eggs, vegetable oil persimmon puree. It's ok if there are some chunks or pieces of persimmon in the puree.
Add wet ingredients to dry ingredients and stir.
Peel and thinly slice 1-2 persimmons. Add half of the batter to the prepared loaf pan. Next add a layer of sliced persimmons.
Add the remaining batter on top of the layer of persimmons. Bake for 20 minutes then rotate the loaf pan so that the bread bakes evenly. Then bake for another 20 minutes or until a toothpick inserted comes out clean.
Allow the bread to cool in the loaf pan for 15 minutes. Gently, using the parchment paper, lift it from the pan on to a cooling rack. Allow to cool for another 30 minutes.
Slice and enjoy!
